African Chicken Peanut Stew
Ingredients
Chicken Breast - 700.00 g
Tomato paste - 0.50 Cup
Red Pepper - 1.00 Whole
Onion - 0.25 Cup
Peanut Butter - 0.25 Cup
Olive Oil - 0.25 Cup
Cayenne Pepper - 1.00 tsp
Bouillon Powder - 1.00 Whole
Chicken Stock - 2.00 Cup
Black Pepper - 1.00 tsp

Steps
- Wash and pat dry chicken pieces. Season with salt and black pepper on both sides.
- Heat some olive oil in a skillet and brown the chicken on both sides. Set aside.
- In a large soup pot, heat ¼ cup olive oil. Add onions and red bell pepper, sautéing until softened.
- Add tomato sauce and spices (except salt). Simmer for a few minutes, then pour in chicken stock.
- Add browned chicken to the pot, stir, and simmer for about 10 minutes. Adjust salt as needed.
- Stir in peanut butter until fully incorporated. Let stew thicken to your desired consistency.
