African Chicken Peanut Stew

  • Chicken Breast - 700.00 g
  • Tomato paste - 0.50 Cup
  • Red Pepper - 1.00 Whole
  • Onion - 0.25 Cup
  • Peanut Butter - 0.25 Cup
  • Olive Oil - 0.25 Cup
  • Cayenne Pepper - 1.00 tsp
  • Bouillon Powder - 1.00 Whole
  • Chicken Stock - 2.00 Cup
  • Black Pepper - 1.00 tsp

  • Steps

    1. Wash and pat dry chicken pieces. Season with salt and black pepper on both sides.
    2. Heat some olive oil in a skillet and brown the chicken on both sides. Set aside.
    3. In a large soup pot, heat ¼ cup olive oil. Add onions and red bell pepper, sautéing until softened.
    4. Add tomato sauce and spices (except salt). Simmer for a few minutes, then pour in chicken stock.
    5. Add browned chicken to the pot, stir, and simmer for about 10 minutes. Adjust salt as needed.
    6. Stir in peanut butter until fully incorporated. Let stew thicken to your desired consistency.
